Springrolls with smoked salmon

Smoked fish a fatty fish, but filled with healthy fats, minerals and protein. A good choice for your springroll filling.

 

Combined with the other ingredients in this recipe it is also light and glutenfree.

Ingredients

Makes 4

  • Koh Thai Ricesheets : 4 sheets
  • Koh Thai Vermicelli : 1/4 package
  • Smoked salmon : 50 g
  • Cucumber : 1/2
  • Basil leaves : to garnish
  • Koh Thai Chili & Herb dipping sauce : 1

Preparation

Step 1 Prepare the noodles according to the instruction on the package. Rinse well and set aside.

 

Step 2 Cut the cucumbers in thin strips, as well as the basil leaves and the salmon.

 

Step 3 Prepare a large bowl of lukewarm water and dip each rice papersheet briefly in the water. It is ok if it still feels firm. It will become softer when you’re adding the filling.

 

Step 4 Using a smooth surface place your rice paper on it and place the filling in the middle in this order: salmon, cucumber, basil and rice vermicelli.

 

Step 5 Roll tightly and cut in two. Serve with the Koh Thai Chili & Herb dipping sauce.
